Guacamole with Toasted Seeds

Combining seeds with avocado brings our favorite dip to a whole new brain-boosting level! Avocado improves blood flow and oxygenation, while pumpkin, hemp, and sesame seeds contain B vitamins and omega-3s, which have both been shown to slow the rate of cognitive decline. Mix these superstars together, serve with a rainbow of sliced veggies (more brain food), and get ready for enhanced concentration and a longer attention span.

Tip: Store any uneaten guacamole with the avocado pit in the bowl to prevent browning.

*Makes 4 servings

INGREDIENTS

2 Tbsp pumpkin seeds
1 Tbsp sesame seeds
1 Tbsp hemp seeds
3 or 4 large ripe avocados, pitted, peeled, and cut into chunks
2 Tbsp fresh lime juice, plus more as needed
1⁄2 tsp ground cumin
1⁄2 tsp fine sea salt, plus more to taste
1⁄4 cup chopped fresh cilantro, plus more for garnish
3 Tbsp finely chopped red onion
1⁄2 medium jalapeño, seeded and minced
1 garlic clove, minced
Pinch of crushed red pepper flakes
Tortilla chips and/or sliced veggies, such as carrot sticks, bell pepper strips, jicama, or celery, for serving

INGREDIENTS

2 Tbsp pumpkin seeds
1 Tbsp sesame seeds

1⁄2 tsp ground cumin
1⁄2 tsp fine sea salt, plus more to taste
1⁄4 cup chopped fresh cilantro, plus more for garnish
3 Tbsp finely chopped red onion
1⁄2 medium jalapeño, seeded and minced
1 garlic clove, minced
Pinch of crushed red pepper flakes
Tortilla chips and/or sliced veggies, such as carrot sticks, bell pepper strips, jicama, or celery, for serving

METHOD

In a medium frying pan over medium heat, toast the pumpkin, sesame, and hemp seeds, stirring occasionally, until fragrant and golden brown, 2 to 3 minutes. Transfer to a bowl and let cool.

In a medium bowl mash together the avocado, lime juice, cumin, and salt, leaving the mixture slightly chunky. Stir in the cilantro, onion, jalapeño, and garlic until well combined. Sprinkle with the crushed red pepper flakes, then season with additional salt and lime juice if needed.

Transfer to a serving bowl. Garnish with the toasted seeds, cilantro, and a squeeze of lime. Serve immediately with chips and/or veggies.
