1 cup raw cashews
1 packed cup chopped pitted Medjool dates
½ cup unsweetened shredded coconut, plus 1/3 cup for rolling
2 tablespoons lemon juice
1 tablespoon maple syrup
½ teaspoon vanilla extract
¼ teaspoon sea salt
1 tablespoon grated lemon zest
1 teaspoon chopped fresh or crumbled dried culinary lavender

METHOD
Place the cashews in a food processor and pulse until very finely chopped, but not completely smooth. Add the dates, 1/2 cup coconut, lemon juice, maple syrup, vanilla, and salt. Process until the mixture is well-combined and clumps into a ball, about 30 seconds.
Transfer the mixture to a bowl and stir in the lavender and lemon zest until well-combined. The mixture will be sticky. If the mixture is too sticky to roll into balls, freeze for 15 to 20 minutes or until firm.
Scoop up a tablespoonful of the mixture and roll into a ball that is about 1inch in diameter. Transfer to a plate. Repeat to use all of the dough.
Spread the remaining coconut in a shallow bowl. Roll each ball in the coconut. Return to the plate, then cover and refrigerate until firm and chilled, at least 30 minutes. Serve. Store any remaining bliss balls in an airtight glass container for up to 3 days in the refrigerator or in the freezer for up to 1 month.
