What started out as a viral trend has become a kitchen staple in my home. The beauty of this recipe is that everything is made inside one dish. It is what I call: no mess, no stress! This end of summer version has peaches and wild blueberries, but this is equally delicious with all berries in any combination you like! Enjoy on its own or add a dollop of yogurt of choice and a drizzle of extra nut butter for additional protein.
INGREDIENTS
2 large bananas
2 cups oats
1 tablespoon chia seeds or flax meal
1 1/4 cups plant-based milk
1/4 cup softened nut butter
pinch of salt
2 cups sliced frozen peaches (recommend cubing for faster baking)
1/2 cup frozen wild blueberries (sub regular blueberries)
2 teaspoons lemon zest
OPTIONAL ADD-INS
2 tablespoons shredded coconut
1/4 cup chopped walnuts

METHOD
Oil an 8 x 8 baking dish. Mash two large bananas in the bottom of the pan to cover. Add oats, milk, chia seeds, salt, and nut butter then mix it to combine leaving the bananas on the bottom if possible. Top with frozen peaches and berries to cover. Add other toppings of choice. (I used walnuts and lemon zest.)
Bake uncovered at 350ºF for 28 to 30 minutes or until slightly browned. Serve immediately with a drizzle of maple or store in the fridge for up to 5 days and reheat for a satisfying breakfast or snack. Enjoy!
